I do not think 3 days will be sufficient. The very minimum I would do would be a full 7 days so every weekday and weekend are sampled ( particulary important as the water useage is usually less at a weekend). After that all points should be sampled on a rotating basis ( say every point every 7 days ) . You talk about critical points only.....sampling should be done at the points of use. Every point of use is critical so if you have lots of other sample points I would get rid of them before you start the validation.The only exception would be to have sample points at varying points through the purification process so you can pick up any issues early on.
